Excellent Food Items to Grill Outdoors

The Classics

Whether it is your favourite vegetables, sausage, fish or any type of meat, everything will taste nice after grilling with the right selection of barbeque sauce and the grilling technique. One famous selection that families choose would be steak. These steaks are best directly grilled, smoked or seared. For better taste, we would advise you to savour it with your favourite choice of barbeque sauce which can be found in the neighbourhood convenience store. Up to date, apples, strawberries, honey, mustard or possibly any ingredient can be used as the base for your barbeque sauce.

Poultry

Besides the above mentioned, poultry is also recommended for grilling. Poultry includes chicken, beef and pork. Chicken is easily cooked and it is versatile, able to mix and match with different other foods to give a good combination. Grilling is not just easy and taste better, it is also healthier as compared to deep frying. Enjoy grilling and eating healthily too. Just be aware not to leave the meat on the grill itself and walk away. Pay attention to the change and texture of the meat to observe if it is cooked.

Seafood

Seafood is a wise choice used in grilling. Some recommended would be prawn, crab, mussels, squids, octopus would provide a nice grilling taste that leave you wanting for more. The juice from the seafood itself has a sweet taste. Other than the usual barbeque sauce, we recommend you to squeeze a reasonable amount of lemon juice, herbs and other seasonings onto the seafood itself to add flavour and taste. Some seafood like prawn is easily cooked so please take note not to have it cooked for too long causing it to be tough and dry.

Vegetables

With a strong taste of poultry and seafood, have some vegetables for a lighter taste. We would recommend you green peppers, zucchini, asparagus and large tomatoes, sweet potato for a different type of taste. Use some of them as garnishing too. Enjoy grilling healthily!

Grilled Barbecue Chicken - An Excellent Dish For Any Chicken Lover

Chicken lovers are found all over the world because it can be cooked in many different ways and they have many healthy ingredients. Chicken should be cooked in such a way that the ingredients are not lost. There are many ways to cook chicken like boiling, frying, grilling etc. It should be cooked to correct proportion so as to avoid under cooking or over cooking. Grilled barbecue chicken is one of the best recipes, which will make people drool.

Every chicken needs a good cleaning before further cooking. After cleaning the chicken thoroughly it should be soaked in hot water so as to remove the impurities if any. They are then dried with the help of paper towels. To have a barbecue flavor we use barbecue rub on the chicken which provides an excellent flavor to the chicken. It is easy to prepare the barbecue rub.

Two tea spoons of Sugar, salt, brown sugar, ground cumin, chilly powder, freshly ground black pepper; cayenne pepper and one fourth cup of paprika are taken and mixed together. This mixture is called barbecue rub and it is gently applied on the cleaned chicken.

Charcoal heating is the most important part of the making of this kind of chicken. Required amount of charcoal is heated until it is completely lit. After it is lit coal is placed over the charcoal. The cooking grate is placed over the lit charcoal and the chicken pieces which are rubbed with barbecue rub are placed over it. If we want to get a smoky flavor a little amount of burning wood or soaked chips or chunks are added to the burning charcoal.

The cooking grate should be oiled so as to avoid drying up of chicken. The chicken pieces should not be kept touching the fire as it will lead to burning of chicken. It should be gently flipped from one side to another so as to make the boiling even. During flipping the barbecue sauce should be applied frequently to give a little sticky or juicy appearance. Barbecue sauce is prepared by cooking onions and garlic in olive oil.

To this tomato sauce, tomato paste, two table spoons of brown sugar, vinegar, Worcestershire sauce 1 teaspoon dry mustard and 1 teaspoon cayenne are added and cooked for 20 minutes. It will take some 30 minutes for cooking the chicken and after applying sauce it should be cooked for another 20 minutes.

While cooking the flavor of the barbecue rub and sauce goes in to the chicken hence it will be a great delight to eat. This is always served with the remaining barbecue sauce which adds up the flavor.
