Grilled Fish with Sweet Mango Barbecue Sauce
Two favorites on the island of Barbados are fish and mango. This dish is the best of both in the Bajan world. Enjoy this dish on a cool summer evening with a glass of wine, or with friends for a backyard get-together.
This recipe is a favorite at Food Affairs, prepared by Chef David Watts.
Ingredients:
4 marlin or dolphin steaks, or other meaty fish, cut 1" thick, brushed with olive oil and pressed garlic, and seasoned with salt and pepper.
For the barbeque sauce:
1tbsp olive oil
1/2 onion, diced
1/2 hot pepper, seeded
1/4 cup pureed mango
2 tbsp Worcestershire sauce
1/4 apple cider vinegar
1 tbsp Dijon mustard
1/2 cup brown sugar
1 cup beef stock
1 tsp Tabasco
1 pinch salt
1 cup beer
In a large saucepan, over high heat, saute onions and pepper in oil. Add remaining ingredients, bring to a boil then simmer over medium/low heat for 30 minutes. Puree sauce in a blender or food processor.
If using a barbeque grill, heat for 10 to 15 minutes on high. Or, if using a grill pan or a frying pan, heat to medium high. Sear the fish for 4 to 5 minutes per side, or until almost completely opaque. Brush 3/4 of the barbeque sauce onto both sides and grill an additional 1 minute per side. For those who prefer their fish medium rare, reduce cooking time to 3 1/2 minutes per side. Top with the reaming sauce and serve.

Applebee's Recipe - Baby Back Ribs Recipe - Grilled Applebee's Variation
My favorite recipe is similar to Applebee's Baby Back Ribs recipe, however the meat is not boiled first. The end result is the excellent, juicy flavor of outdoor grill cooked ribs with a surprise ingredient!
Grill Cooked Baby Back Ribs
1 or 2 racks of baby back ribs (St. Louis ribs work well also)
apple juice (one large jug)
spice rub
one large (store bought) foil pan (large enough to fit 1 -2 racks of ribs turned on sides)
one small (approximately 8"x11" x 3"deep) foil (store bought) pan
barbecue sauce of choice
(Note: Only heat resistant metal pans or disposable foil pans should be used for this variation of the Applebee's recipe.)
Pull membranes off the ribs and rub with a spice rub (this can be store bought or home concocted) of your choice.
Pour some of the apple juice into the small foil pan; enough to come more than half way up the side of the pan (a smaller pan can be used, if needed to fit into a small grill). Place the filled open pan in the grill (under the surface grates).
Place the ribs directly on the grill (with the apple juice pan under the grates) and cook for 1 hour.
Pour more juice into the large foil pan (it should reach about 1" or so up the bottom of the pan). Take the ribs off the grill and place into the large foil pan. Prop the meat up in the pan sideways so it is not totally immersed in the juice. Meanwhile, remove the small foil pan under the grill grates (it is not needed anymore).
Place the foil pan (with the ribs) on the grill; cover the pan loosely with aluminum foil wrap and cook 1 hour more on the grill.
The ribs should now be tender , juicy and can be served with a barbecue sauce of your choice at the table. The Applebee's recipe uses a sauce with a ketchup and cider vinegar base.

Grilled Barbecue Chicken - An Excellent Dish For Any Chicken Lover
Chicken lovers are found all over the world because it can be cooked in many different ways and they have many healthy ingredients. Chicken should be cooked in such a way that the ingredients are not lost. There are many ways to cook chicken like boiling, frying, grilling etc. It should be cooked to correct proportion so as to avoid under cooking or over cooking. Grilled barbecue chicken is one of the best recipes, which will make people drool.
Every chicken needs a good cleaning before further cooking. After cleaning the chicken thoroughly it should be soaked in hot water so as to remove the impurities if any. They are then dried with the help of paper towels. To have a barbecue flavor we use barbecue rub on the chicken which provides an excellent flavor to the chicken. It is easy to prepare the barbecue rub.
Two tea spoons of Sugar, salt, brown sugar, ground cumin, chilly powder, freshly ground black pepper; cayenne pepper and one fourth cup of paprika are taken and mixed together. This mixture is called barbecue rub and it is gently applied on the cleaned chicken.
Charcoal heating is the most important part of the making of this kind of chicken. Required amount of charcoal is heated until it is completely lit. After it is lit coal is placed over the charcoal. The cooking grate is placed over the lit charcoal and the chicken pieces which are rubbed with barbecue rub are placed over it. If we want to get a smoky flavor a little amount of burning wood or soaked chips or chunks are added to the burning charcoal.
The cooking grate should be oiled so as to avoid drying up of chicken. The chicken pieces should not be kept touching the fire as it will lead to burning of chicken. It should be gently flipped from one side to another so as to make the boiling even. During flipping the barbecue sauce should be applied frequently to give a little sticky or juicy appearance. Barbecue sauce is prepared by cooking onions and garlic in olive oil.
To this tomato sauce, tomato paste, two table spoons of brown sugar, vinegar, Worcestershire sauce 1 teaspoon dry mustard and 1 teaspoon cayenne are added and cooked for 20 minutes. It will take some 30 minutes for cooking the chicken and after applying sauce it should be cooked for another 20 minutes.
While cooking the flavor of the barbecue rub and sauce goes in to the chicken hence it will be a great delight to eat. This is always served with the remaining barbecue sauce which adds up the flavor.
