BBQ Chicken Recipe - How to Make the Most Tender BBQ Chicken
BBQ chicken recipe ingredients
2 x 4-5lb roasting chickens
Olive Oil
Dark Soy sauce
Black pepper
Marinade the roasting chickens first by basting them with equal parts of olive oil, dark soy sauce and crack over about half a tablespoon of black peppercorns. For best results place the roasting chickens on the upper rack area of your BBQ smoker at around 250f to 300f for around 4 or so hours until the internal temperature of the chickens reach 180f.
Tend to your smoker once or twice during the smoking process and top up with wood chips as appropriate. Don't forget to add some extra water to the smokers water pan to ensure that your chickens are getting a light moist smoke throughout the whole cooking process.
Once the chicken has cooked properly, remove the whole chickens from your smoker and wrap them in some plastic freezer bags or aluminum foil and leave the birds to rest for around 30 minutes or so.
Now that the chickens have had plenty of time to absorb the flavours and rest, remove them from your wrap, and gently pull off the tender meat and discard the BBQ chicken juices. A Weber Smoky Mountain or Big Green Egg are ideal smokers for 2-4 medium sized roasting chickens but you can use any smoking apparatus that you have to hand and cook as many as you wish according to the amount of people you have to feed using the same recipe.
Cooking "low-and-slow" on your smoker or grill is the best way to go if you are looking for the best tasting BBQ chicken. Lowering cooking times and turning up the temperature will allow you to serve your meats faster to your guests, but the results will not be as good.
Once you have removed the wings and legs, carefully cut along the breastbone of each chicken and cut it into a few pieces to your liking. You should notice how tender the meat is as you will observe all of the remaining moisture in the meat because you have cooked your chicken to perfection. It is now time to serve the meat to your guests and enjoy that delicious BBQ chicken taste.

Main Course Recipe Barbecue Chicken Drumsticks
This is an excellent recipe for making some of the most mouth watering barbecue chicken drumsticks you will ever eat. (Note: I recommend you use premium quality for this recipe)
Ingredients:
Start with about 10 to 12 drumsticks, salt and pepper and 2 tablespoons butter
Use 1/3 cup of each kind of barbecue sauces below mixing until you have about 2/3 cup. You may mix more or less depending upon your personal preference and how much chicken you prepare.
Use barbecue sauces of your choosing: However, I use Jack Daniel's barbecue and mix it with Padang Chinese barbecue sauce, which is quite good. You can usually find this sauce in the international food section of any major grocery store. In fact if you look around this section there is usually a wide selection of very good barbecue sauces so do not feel limited to what I use; just explore the different flavored sauces as they are all quite good.
(When you become experienced with flavors you might want to add some liquid smoke or Worcestershire sauce or soy sauce which zip up the flavor.)
Afterwards I sprinkle McCormick spices (mesquite barbecue) on the final product, for an extra zing.
Instructions:
Preheat oven to about 360 degrees Fahrenheit.
Meanwhile:
Place the chicken in a baking dish about 13 inches long. I think glass is the best choice of baking dish to use for this dish. I use Correlle baking dishes and my recipes always come out perfect and the dishes are easy to clean.
Melt the butter in a microwave oven and spoon-drizzle the butter over each drumstick.
Next sprinkle the drumsticks with salt and pepper and then bake for about 1and1/2 hours
Next turn off oven and turn on the broiler part of your oven.
While it is heating up baste each drumstick with a basting brush with the barbecue mixture described above and place the chicken under the broiler. Broil for about a minute, remove from oven and turn each drumstick and baste the other side and again place in the oven under the broiler and broil for about a minute.
Remove from the oven and turn each drumstick and repeat the basting and broiling process until you are out of barbecue sauce, and your chicken has that barbecued look.
Do not feel you are limited to drumsticks as any kind of cut up chicken pieces will do, but this recipe I believe works best on drumsticks.
This recipe sounds so simple and it is so simple, and the drumsticks are exceptional. I urge you to give it a try. It is one of my favorite chicken recipes and I think it will be one of your favorite recipes also.

What Goes in a Good Barbeque Chicken Recipe?
There are a lot of barbeque chicken recipes that people have used over the years to impress their friends and families, and obviously it takes just the right balance to make the flavors sing. So what exactly goes into a good barbeque recipe? It's a lot simpler than you might think and only takes a little bit of knowledge and experimentation to get the right formula down to please friends and family and even win competitions.
The key is a good balance of spicy and sweet. When it comes to making a barbeque chicken recipe, people look to whatever satisfies a multitude of tastes. Most people enjoy a certain degree of both spicy and sweet in a barbeque chicken recipe, which is why it is so important to use both as keys to unlocking the secrets of the right barbeque sauce.
As far as spicy goes, you need to mix up ingredients like hot sauce into your mix. Hot sauce is wet, so it mixes well with ketchup or spicy mustard to add a kick to your barbeque chicken recipe. Mix up wet ingredients with dry ingredients such as cayenne and ground pepper or ground chili. This will make for a good balance when the sauce on the chicken comes off the grill.

Barbecue Chicken and Mozzarella Pizza With Red Onion
This is a nice easy pizza recipe that can be prepared in less than half an hour. Use your favorite brand and flavor of barbecue sauce to give the pizza your own personal touch. Red onions can be a little harsh, so slice them very thin. Cooking will take some of the bite out of the onion. A white or sweet onion would work well here, as would green onions. Stick to grated, dry mozzarella for best results.
To make it more interesting and flavorful, increase the amount of sliced red onion to 1 cup, slowly caramelize them over very low heat, adding just a touch of water or stock to deglaze the pan, every so often if necessary. Continue cooking until the onions are browned and soft. The slow cooking draws out the natural sugars and adds great flavor. Instead of placing them on the pizza before cooking, add them to the pizza as it rolls out of the oven.
While the recipe just says to cook and dice the chicken breasts, a really nice way to cook it is to grill the chicken. Perhaps throw a couple extra chicken breasts on the grill next time you light up the backyard barbecue and use the chicken the next evening to make pizza. The smoky grilled chicken adds a lot of extra flavor. And the work of preparing the chicken for the pizza is already done.
Barbecue Chicken and Mozzarella Pizza with Red Onion
Ingredients:
1 (12-inch) Pre-Baked Pizza Crust
1 cup Barbecue Sauce
2 Chicken Breasts, cooked, diced
10 ounces Mozzarella Cheese, shredded
1/2 cup Red Onion, thinly sliced
1/2 cup Green Pepper, chopped
Preparation:
1. Preheat the oven to 450 degrees.
2. Using a spoon, spread the barbecue sauce evenly over the entire crust.
3. Sprinkle over the crust the diced chicken, red onion and green pepper.
4. Sprinkle the mozzarella cheese evenly over the top.
5. Bake for 10 to 12 minutes, or until the mozzarella is melted.
